montefin's Avocado Shrimp Salad Cups

Serves 4


  • 2 medium size Califoria Avocados (Hass variety)
  • 1/2 Cup Shrimp meat
  • 2 - 3 Tbls Mayonnaise
  • 1/4 Cup minced Celery
  • 2 - dashes of Tabasco Sauce
  • 1 Tsp chopped Cilantro
  • Salt and White Pepper, to taste
  • Fresh limes, preferably Mexican or Key limes

Feel free to , so you can easily return whenever you want to make this.

In a bowl mix Shrimp meat with Mayonnaise, Celery, and Cilantro. Salt and Pepper to taste, add Tabasco sauce, and juice of 1 Lime, and stir.

With a sharp knife, cut each Avocado in half lengthwise. Imbed blade of knife into each pit and twist to remove neatly.

Fill holes in Avocado with Shrimp Salad mixture. Garnish with Limes and Celery sprigs.

Refrigerate until ready to serve.

Less than 6 carbohydrate grams per serving.
