Note: The strength of the low carbohydrate community's buying power has so powerfully affected the food industry that companies are scurrying to put 'something, anything low carb' on the shelf. Sometimes they're fibbing, kidding themselves and us, or, sadly, committing fraud. Some are simply desperate because they see themselves being put out of business as the customers they've built their businesses on discover low carb options offered by old and new competitors.

Inevitably, many, if not most, of these products will disappear from store shelves (hopefully not before they're discounted down to next to nothing). But, some -- let's hope the good ones -- will find a market and deliver enough profits for the companies that produce them to keep making them.

• Milton's Whole Grain Bread - At 16 total carbohydrate grams per slice minus 5 grams of dietary fiber for 11 grams of net carbs, O staturated fat, 125mg sodium, and 4g protein not a bad bread at all. Contains whole wheat flour, vital wheat gluten, degerminated yellow corn grits, oat groats, wheat bran, rolled oats, flaxseed, bleached oat fiber (uuyyhh), cracked wheat, malted barley flour, wheat starch, cultured wheat starch, and soy flour. • Country Hearth Stoneground 100% Whole Wheat Bread - A Sara Lee Bakery Group product. 20 total carbohydrate grams per slice minus 3 grams of dietary fiber for 17 grams net carbs. Whole wheat flour is higher in fiber, vitamin E, some B vitamins and trace minerals, and protein than enriched white flour. When whole wheat flour is stone-ground, the kernels of wheat are crushed between two heavy, rotating stones, so that the bran and germ remain. Since roller-milling separates the bran and the germ from the endosperm, the three components actually have to be reconstituted to produce whole wheat flour. (The germ and bran are visible in the flour as minute brown flecks.)
